For this week's recipe I am recommending Lalume, a white wine aged in the barrel from the D.O. Ribeiro.

It is aged in French oak barrels and Asian foudres, ovoid concrete vats and stainless-steel vats. It has a second ageing on its fine lees.

It is an aromatic white wine with floral and white fruit notes, and hints of aromatic herbs. On the palate it has good acidity, with structure and a final flavour of fruit.

It should be served at 10ºC and is best drunk within 7 years of the vintage date.

It pairs perfectly with smoked salmon, baked white fish, cod, creamy rice and cooked seafood.
