For this week’s miniature haute cuisine, we will pair it with a 2016 Magister Bibendi Reserva. This Rioja is made by the Bodegas Navarra Sotillo winery.
The grape is graciano and comes from twenty-year-old vines, the wine is aged for 12 months in French and American oak barrels and it is a very bright cherry red colour.
In its powerful aroma, what stands out are the ripe fruits of the forest which combine wonderfully with the toasted and smoked hints coming from the barrel.
On the palate what stands out is its initial vivaciousness followed by a fruity taste with a finish of sweet and pleasant tannins. The ideal drinking temperature is 18ºC.
A perfect pairing for game, lamb, Iberian pork and with mushroom dishes and stews.
It also pairs fantastically with the dish that Aingeru Etxebarria is going to prepare for us and which you can see here.
